Since there is a degree of transmissibilty between species [not sure about scrapie, BSE transmission to humans from cows seems widely accepted, CWD from elk and deer to humans is only suspected and should be watched for], it sounds like there is an argument against eating meat from those species.  The incubation periods may be much shorter in the susceptible ungulates than in humans but that is not well established and it could be up to 10 years.  [So a healthy looking cow could still be a carrier].
And at least for deer and elk, transmissibility is reported to be quite high...just browse in the same field as an infected animal.
